Pavlova

Ingredients:
Meringue:
3 egg whites (about 100g)
1 cup sugar
1 teaspoon vanilla extract

Whipped Cream:
250ml heavy cream 
2 tablespoons powdered sugar

Decoration:
Cherries 
1 cup frozen wild berries

Instructions:
1. Place the egg whites and sugar in the mixer bowl over a pot of boiling water
2. With a spoon mix the egg whites with the sugar until the mixture is warm and sugar is completely dissolved
3. Transfer the bowl to a mixer and beat for 5-7 minutes
4. Add vanilla extract and beat for another minute 
5. On a baking sheet draw a circle with a 24 cm and an inside circle creating a 4cm hoop
5. Transfer the meringue with a spoon to fill the hoop 
6. Bake the meringue about 3 hours at 100 degrees Celsius
7. Whip the heavy cream with 2 tablespoons powdered sugar
8. In a small pot heat up the frozen wild berries and filter out remaining liquid 
9. Place cherries inside the hoop
10. Decorate with whipped cream and wild berries sauce
