Creamy Corn Soup

INGREDIENTS:

80g butter
4 tbsp oil
2 onions finely diced
3 carrots sliced
2 red peppers diced
4 cups corn
2 tbsp flour
Salt
Pepper
6 cups chicken soup
1 cup heavy cream

INSTRUCTIONS:

  1. Dice all vegetables
  2. Melt butter, oil in a large pot
  3. Cook onion, carrots, peppers and 3 cups of corn for 15 minutes
  4. Add flour
  5. Seasson to taste with salt and pepper
  6. Add chicken soup
  7. Bring to boiling, cover pot
  8. On low heat, continue cooking for 30 minutes
  9. Puree soup using a food processor stick
  10. Add remaining cup of corn and cook for another 10 minutes
  11. Add heavy cream and bring to boiling again
