Blueberry Jam

INGREDIENTS:

8 cups fresh blueberries
2 tbsp lemon juice
1 package powdered fruit pectin
7 cups sugar


INSTRUCTIONS:

  1. Mash blueberries
  2. Transfer to a Dutch oven
  3. Add lemon juice; stir in pectin
  4. Bring to a full rolling boil over high hea
  5. Stir in sugar; return to a full rolling boil
  6. Boil for 1 minute, stirring constantly
  7. Remove from the heat; skim off foam
  8. Ladle into jars or freezer containers and cool to room temperature for 1 hour
  9. Cover and let stand overnight
  10. Refrigerate for up to 3 week
