INGREDIENTS:

(makes 3 baguettes)

1/2 cup warm water
1/4 cup flour
8oz dry yeast
1 tbsp salt
Canola oil
1/2 cup ice cubes

INSTRUCTIONS:

  1. Mix all ingredients in a bowl to get uniform dough
  2. On a floured surface knead the dough for 10 minutes
  3. Lightly lubricate a large bowl with canola oil
  4. Place the dough in bowl and cover with plastic wrap; let rise for 45 minutes
  5. Shape dough into a 15 x 20 cm rectangle
  6. Fold the center of both longer sides (20 cm) in
  7. Fold both of the shorter sides over them
  8. Return the dough into the bowl with the folding facing down, cover again with plastic wrap, and let rise for an hour
  9. Divide the dough into 3 equal parts and roll each part into a 35 cm stick
  10. Cover the sticks with loose plastic and let rise for a 50 minutes
  11. Preheat the oven to 240 degrees celsius
  12. Arrange sticks on a pan lined with baking pape
  13. Cut with a sharp knife 4 diagonal slots 10cm each
  14. Place the ice cubes in a metal container on the bottom of the oven
  15. Bake for 20-30 minutes
